Sweet Berry Layers
If we want a dessert that looks beautiful, tastes refreshing, and feels easy to prepare at home, strawberry parfait is a wonderful choice. A parfait is a chilled layered dessert usually served in a clear glass. It combines fresh fruit, cream, crunchy toppings, and ice cream into colourful layers that look elegant and inviting.
This strawberry parfait has soft whipped cream, sweet berry sauce, juicy strawberries, crunchy corn flakes, and creamy ice cream. Every spoonful brings a different texture, making the dessert feel light yet satisfying. It is perfect for warm afternoons, family gatherings, or a relaxing weekend treat.
The recipe also works well for beginners because the steps are simple and easy to follow. We only need a few ingredients and about one hour to prepare everything.

Ingredients We Need

This recipe makes 2 large servings.
For the strawberry sauce:
- 2 cups fresh or frozen strawberries (about 300g)
- 2 tablespoons sugar
- 2 tablespoons water
For the whipped cream:
- 1 cup heavy cream (240ml)
- 2 tablespoons sugar
For the parfait layers:
- 2 cups fresh strawberries (about 300g)
- 1/4 cup frosted corn flakes
- 2 scoops vanilla or strawberry ice cream
Optional decoration:
- Extra strawberry slices
- Small mint leaves
Equipment:
- 1 small saucepan
- 1 spatula
- 1 electric hand mixer
- 1 large mixing bowl
- 1 piping bag or spoon
- 2 tall clear dessert glasses

Step 1: Make the Strawberry Sauce

The strawberry sauce gives the dessert its rich berry flavour. Making it first allows enough time for cooling.
1. Wash the strawberries carefully if using fresh fruit.
2. Remove the green tops and cut large strawberries into smaller pieces.
3. Add 2 cups strawberries, 2 tablespoons sugar, and 2 tablespoons water into a small saucepan.
4. Place the saucepan over low heat.
5. Stir gently for about 3 to 5 minutes until the berries begin releasing juice.
6. Increase the heat slightly to medium.
7. Cover the saucepan with a lid and cook for another 5 minutes.
8. Remove the lid and use a spatula to gently press the strawberries into smaller pieces.
9. Continue cooking for another 3 to 4 minutes until the sauce becomes slightly thick.
The sauce should still pour easily but look smoother and richer than fresh fruit juice.
10. Turn off the heat.
11. Let the sauce cool completely at room temperature for about 20 minutes.
12. Place it in the refrigerator for at least 30 minutes.
Cold sauce helps keep the parfait layers neat and refreshing.

Step 2: Prepare the Fresh Strawberries

Fresh strawberries add natural sweetness and juicy texture to the parfait.
1. Wash 2 cups fresh strawberries carefully.
2. Dry them gently using paper towels.
3. Remove the tops.
4. Dice half of the strawberries into small cubes.
5. Slice the remaining strawberries into halves or thin slices for decoration.
Next:
- Place the diced strawberries into a bowl.
- Add 3 to 4 tablespoons chilled strawberry sauce.
- Mix gently so the fruit becomes coated with the sauce.
This step gives the strawberries extra flavour and keeps them juicy inside the dessert.

Step 3: Whip the Cream

The whipped cream creates soft and smooth layers between the fruit and ice cream.
1. Pour 1 cup heavy cream into a cold mixing bowl.
2. Add 2 tablespoons sugar.
3. Use an electric hand mixer on medium speed.
4. Beat the cream for about 3 to 4 minutes.
The cream is ready when soft peaks form and the texture looks fluffy. When lifting the mixer, the cream should hold its shape gently without becoming stiff.
5. Transfer the whipped cream into a piping bag if available.
6. Keep the cream chilled in the refrigerator until assembling.

Step 4: Assemble the Strawberry Parfait

This is the most enjoyable part because we can see the colourful layers come together.
For each glass:
1. Add 2 tablespoons frosted corn flakes to the bottom.
2. Spoon in 3 tablespoons diced strawberries with sauce.
3. Add a layer of whipped cream using a spoon or piping bag.
4. Place 1 scoop of ice cream on top.
5. Drizzle 1 tablespoon strawberry sauce over the ice cream.
If the glass is tall:
- Repeat another layer of corn flakes, strawberries, and cream.
For the final decoration:
1. Pipe extra whipped cream on top.
2. Arrange sliced strawberries neatly.
3. Drizzle a little more sauce.
4. Add mint leaves if desired.
The clear glass helps show all the beautiful layers clearly.

Helpful Tips for Better Results

A few simple tips can improve both flavour and texture:
- Chill the dessert glasses for 15 minutes before assembling.
- Use ripe strawberries for sweeter flavour.
- Assemble shortly before serving so the corn flakes stay crunchy.
- Keep the ice cream frozen until the final step.
- Use cold heavy cream because it whips faster and holds shape better.
If we prefer extra fruit flavour, we can also add blueberries or raspberries between the layers.
