Ingredients We Need

This recipe makes about 4.5 half-pint jars of blueberry jam.
Main Ingredients:
- 1 pound fresh or frozen blueberries
- 2 tablespoons fresh lemon juice
- 3 tablespoons Ball Classic pectin
- 3 1/3 cups sugar
Optional Low-Sugar Version:
- 1 pound blueberries
- 2 tablespoons lemon juice
- 2/3 cup water or unsweetened apple or pear juice
- 3 tablespoons low-sugar pectin
- 1 cup sugar
Kitchen Tools:
- Large stainless steel or enamel cooking vessel
- Potato masher or rolling pin
- Measuring cups and spoons
- Wooden spoon
- Clean glass jars with lids
- Jar lifter or kitchen tongs
- Large container for water bath processing

Step 1: Prepare the Blueberries

1. First, rinse the blueberries carefully under cool water. Drain them well using a colander.
2. If frozen blueberries are used, let them sit at room temperature for about 10 minutes so they soften slightly.
3. Place the blueberries into a large bowl. Use a potato masher to crush them gently. If a potato masher is unavailable, place the berries inside a zip bag and crush them with a rolling pin.
4. The texture should stay slightly chunky instead of completely smooth. Small berry pieces help the jam taste more homemade and flavorful.
5. Measure about 2 2/3 cups of crushed blueberries and pour them into the cooking pan.

Step 2: Mix the Ingredients

1. Add:
- 2 tablespoons lemon juice
- 3 tablespoons pectin
2. Stir everything thoroughly so the pectin dissolves evenly into the berry mixture.
3. The lemon juice helps brighten the blueberry flavor while also supporting the jam texture.

Step 3: Heat the Berry Mixture

1. Place the mixture over high heat.
2. Stir constantly with a wooden spoon while the mixture heats. After several minutes, small bubbles will begin appearing.
3. Continue stirring until the mixture reaches a full rolling boil. This means the bubbling stays strong even while stirring.
4. This step is important because proper boiling helps activate the pectin.

Step 4: Add the Sugar

1. Slowly pour in:
- 3 1/3 cups sugar
2. Stir continuously so the sugar melts evenly into the berries.
3. Once all the sugar dissolves, bring the mixture back to a strong boil.
4. Cook for exactly 1 minute while stirring continuously. During this time, the jam becomes shinier and slightly thicker.
5. The kitchen will quickly fill with a sweet blueberry aroma.

Step 5: Remove Foam

1. Sometimes light foam appears on top of the jam during cooking.
2. Use a spoon to gently skim the foam away. Removing foam gives the finished jam a smoother appearance inside the jars.

Step 6: Fill the Jars

1. Prepare clean hot jars before filling.
2. Carefully ladle the hot jam into each jar, leaving about 1/4 inch space at the top.
3. Use a damp paper towel to wipe the rims clean. This helps the lids seal correctly.
4. Place the lids on top and tighten the bands gently until snug.

Step 7: Process the Jars

1. Fill a large large saucepan with boiling water.
2. Carefully lower the jars into the hot water using a jar lifter or tongs. Make sure the jars are fully covered with water.
3. Boil the jars for 10 minutes.
4. If we live in a high-altitude area, slightly longer processing time may be needed.
5. After processing, remove the jars carefully and place them on a clean towel.
6. Allow them to cool completely for several hours.
7. As the jars cool, soft popping sounds may appear. This usually means the lids are sealing properly.

Step 8: Check and Store the Jam

1. After 24 hours, press gently on the center of each lid.
2. If the lid stays firm and does not move, the jar is sealed correctly.
3. Store sealed jars in a cool and dry place away from direct sunlight.
4. Any jar that does not seal should be refrigerated and enjoyed within a few weeks.
