Ingredients

For the Pie Crust
- 3 cups all-purpose flour
- 1 cup unsalted butter, cold and cubed
- 1 teaspoon salt
- 1 tablespoon sugar
- 7 tablespoons ice water
For the Cherry Filling
- 5 cups fresh cherries, pitted
- 1 cup sugar
- 3 tablespoons cornstarch
- 1 tablespoon fresh lemon juice
- 1 teaspoon vanilla extract
- 1 teaspoon ground cinnamon
For the Lattice Topping
- 1 egg, beaten
- 1 tablespoon sugar for sprinkling

Preparation

Step 1: Prepare the Dough
In a large mixing bowl, combine the flour, salt, and sugar. Add the cold butter and mix until the texture resembles coarse crumbs. Gradually add the ice water until the dough comes together smoothly.
Divide the dough into two portions, shape into discs, cover, and refrigerate for at least 30 minutes.
Step 2: Prepare the Cherry Filling
In a saucepan, combine the cherries, sugar, cornstarch, lemon juice, vanilla extract, and cinnamon. Cook over medium heat while stirring gently until the filling thickens slightly and becomes glossy. Remove from heat and allow the filling to cool.
Step 3: Assemble the Pie
Preheat the oven to 375°F (190°C).
Roll out the first dough disc and place it into a pie dish. Pour the cooled cherry filling evenly into the crust.
Roll out the second dough disc and cut it into strips. Arrange the strips in a woven lattice pattern across the top of the pie. Press and seal the edges carefully.
Brush the lattice crust with beaten egg and sprinkle lightly with sugar for a golden finish.
Step 4: Bake the Pie
Bake for 45–50 minutes, or until the crust becomes golden brown and the cherry filling bubbles gently through the lattice openings.
Allow the pie to cool before slicing so the filling can set properly.

Tips

- Use cold butter to achieve a flaky and tender crust.
- Fresh cherries provide the best flavor and texture.
- Avoid overfilling the pie to prevent spills during baking.
- If the crust browns too quickly, loosely cover the edges with foil.
- Let the pie cool for at least 2 hours before serving for cleaner slices.
