• 12 fresh mushrooms, cleaned and stems trimmed
• 12 grape tomatoes
• 10 torn fresh basil leaves
Preparation
Start by spraying a nonstick skillet with cooking spray and placing it over medium-low heat. Add about 2 tablespoons of Parmesan cheese at a time, cooking until the cheese melts into a thin circle, bubbles up, and begins to brown at the edges.
Flip the crisp and cook for another 30 seconds to brown the other side. Remove each crisp from the skillet and set them aside to cool, repeating the process until you have 3 to 4 cheese crisps.
Next, heat 1 teaspoon of olive oil in a skillet over medium heat. Add the pine nuts and cook them, stirring occasionally, until they're lightly toasted and fragrant—this should take about 3 minutes. Once toasted, set the pine nuts aside.
Meanwhile, cook the gnocchi according to the package directions, then drain them in a colander. Set them aside.
In another large skillet, heat 1 tablespoon of olive oil over high heat. Add the chopped zucchini and stir-fry until seared, about 2 minutes. Remove the zucchini from the skillet. Lower the heat to medium, then add the mushrooms.
Cook them, stirring occasionally, until they release their juices and become tender but still firm, about 5 minutes. Drain the excess juices, then return the zucchini to the skillet.
Add the grape tomatoes, torn basil leaves, toasted pine nuts, the cooked gnocchi, and the remaining tablespoon of olive oil. Stir everything together until heated through.
